Named for its chef, Sushi Takeshi is situated in the lobby of The Mira Hotel on Nathan Road, Tsim Sha Tsui, and represents the independent flowering of a career spent at some of Hong Kong's and Tokyo's most acclaimed sushi counters. Chef Kin-san trained at Michelin-starred Ginza Iwa in Tokyo before moving to Hong Kong to work at Sushi Wadatsumi, where he built his reputation as a precise and soulful Edomae practitioner.
