Sushi Saito Hong Kong occupies the 45th floor of the Four Seasons Hotel alongside Tempura Uchitsu, operated by Global Link Dining Club — the group entrusted by Takashi Saito to bring his legendary standard outside Japan. Saito's Tokyo original is widely considered one of the hardest sushi reservations on the planet; the Hong Kong branch carries that prestige to Central's financial district. Head chef Masashi Kubota (Japanese) trained rigorously in the Saito method, emphasising the rice — dressed with red vinegar for a rounded acidity — as the true measure of a great sushi-ya. Saito himself continues to hand-select seafood at Toyosu Market, which is flown to Hong Kong daily, ensuring that the city's diners taste the same calibre of fish as guests of the Tokyo flagship. The restaurant holds one Michelin star and operates by reservation only, with telephone bookings opening on the first day of each month — making a confirmed table one of Hong Kong dining's most coveted trophies.
