Sushi Mamoru occupies a sky-high counter at FORTY-FIVE, the premium dining floors within Gloucester Tower at the heart of The Landmark complex in Central. Head chef Hirofumi Chiba is a third-generation sushi master with more than 22 years of experience in Japan's most rigorous culinary environments, specialising in the traditional Edomae approach: aged fish preparations, red-vinegar shari, and the meticulous assembly of nigiri that respects the ingredient above all else. Sustainability is a core principle — the restaurant sources responsibly and works closely with trusted Japanese fishing markets to ensure provenance and freshness. The move from Wan Chai to its current FORTY-FIVE address elevated the restaurant's setting dramatically, with Central harbour views serving as the backdrop to a meal centred entirely on craft.
