Noboru Nakamura began his sushi career in New York City's Greenwich Village before moving to Chicago in 1988, and opened Nobori Sushi in Glenview in 2009. The restaurant's own website declares its Japanese ownership with pride, and Nakamura is a hands-on presence behind the counter, personally working service for over 15 years. The menu covers the full traditional Japanese repertoire — nigiri, maki, sashimi, tempura, teriyaki, ramen, and udon — executed with the warm temperature and fish-cut precision that distinguish Japanese-trained chefs. North Shore regulars consistently praise Nobori as the most reliable and authentic Japanese sushi destination on the suburban North Shore, often drawing comparisons to sashimi found in Japan.
