About
Nobuyuki Matsuhisa, born in Hamamatsu, Japan, created one of the most influential fusion cuisines of the 20th century by blending Japanese precision with Peruvian ingredients during his years in Lima. The Chicago outpost, opened in 2017 inside the Nobu Hotel in the West Loop, brings that globally recognised formula to Fulton Market with a full sushi bar, omakase service, and the brand's celebrated signature dishes. Signature plates—black cod marinated three days in sweet white miso, thinly sliced yellowtail with jalapeño and yuzu—remain the standards by which Chicago diners evaluate high-end Japanese-inflected dining. The restaurant also operates a breakfast and weekend brunch programme, rare for a Japanese fine-dining concept in Chicago.
