Omakase Room by Kanemaru arrived in Chicago's River North as the third U.S. outpost of Chef Shinichiro Kanemaru's omakase brand. Kanemaru spent over 17 years at Ginza Kyubey in Tokyo before bringing his 16-course program — priced at $195 per person — to a jewel-box, 10-seat counter at 40 W Hubbard Street. Every piece of sushi reflects his obsessive sourcing: uni comes directly from Hokkaido, and the daily menu shifts with what arrives from Japan's fish markets each morning. The space, recognized with a Jean Banchet Award for restaurant design, pairs minimalist Japanese aesthetics with the unhurried intimacy that defines the chef's experience.
