Yoshikazu Suto left Gunma Prefecture in Japan at twenty and spent years working in some of Europe's most admired kitchens — Azurmendi, Enigma, Quique Dacosta and Disfrutar — before opening his own restaurant in Sants with the confidence of someone who has nothing left to prove. The six-seat counter is the entire restaurant: there are no tables, no hidden rooms, only the chef, one assistant and the six people lucky enough to have secured a reservation months in advance. The omakase menu combines Japanese-style cold and hot preparations, culminating in handcrafted nigiri made with fish of superlative quality. Suto explains each dish in fluent Spanish, sharing both the story and the technique. The 2023 Michelin star arrived, as diners had long predicted, as a recognition of one of the most pure and personal dining experiences available anywhere in Spain.
