About
When Masami Wakabayashi opened Zakkushi in Vancouver's West End over two decades ago, he introduced the city to the art of yakitori—carefully crafted chicken skewers grilled over Japanese binchotan charcoal. The radiant heat and minimal smoke of binchotan allows each ingredient to develop its natural flavours, a technique Zakkushi imports directly from Japan. Head chef Hiroshi Tamanaha, trained in Japanese culinary traditions, oversees the menu which extends beyond yakitori to classic izakaya small plates and a curated selection of shochu and Japanese whisky. The lively Denman Street location remains a West End institution.
