Opened in October 2017 by Japanese chef-owner Yoshinori Morié, this intimate restaurant quickly earned a Michelin star in 2019, which it has held through 2025–2026. Morié channels what he calls the 'Japanese soul' — a fastidious attention to ingredients, technique, and balance — into menus rooted firmly in French gastronomy. Located between Saint-Germain-des-Prés and Odéon in one of Paris's most storied neighborhoods, the dining room's ancient timbers and stone create an ideal backdrop for Morié's meticulous tasting menus.
