Shinichi Sato, born in Hokkaido, Japan, built his reputation over many years at Passage 53 in Paris's 2nd arrondissement, where he held 2 Michelin stars. In 2023, he opened Blanc at 52 rue de Longchamp in the 16th, a more intimate and personal project where the décor, the service, and the cooking are stripped back to essentials — as the name ('white') suggests. The Michelin Guide awarded Blanc its first star in 2024 and the Prix Versailles for its interior. The menus (Perle at €260, Blanc at €360, Chef's Table at €450; lunch at €180) feature contemporary French cuisine channelled through Sato's Japanese rigour: high-quality seafood from Normandy and Brittany, Perche poultry, binchotan-grilled wagyu, with a discreet but profound Japanese sensibility in the balance, texture, and restraint of every plate.
