Opened in 2012 by Japanese chef-owner Takayuki Honjo, ES has held a Michelin star since the mid-2010s and remains one of Paris's most quietly compelling fine-dining destinations. Honjo designed every element of the pared-down white interior himself — almost monastic in its restraint — so that nothing distracts from the meal, which he presents as a kind of ceremony. His tasting menus (Menu Saison at €150; Menu ES at €250) draw on his years training at three of the world's most technically rigorous kitchens: Astrance in Paris, Mugaritz in Spain's Basque Country, and Quintessence in Tokyo. The result is a cuisine of striking, unconventional pairings — foie gras with sea urchin, pigeon with cocoa — where flavors merge with an intimacy that recalls the chef's Japanese heritage while remaining unmistakably modern. Dinner only, Tuesday through Saturday.
