Opened in November 2010 by Hiroki Yoshitake — who earned a Michelin star within 18 months — Sola is now helmed by Japanese chef Kosuke Nabeta, who has maintained the restaurant's stellar reputation and its place in the 2026 Michelin Guide. Diners descend into a dramatic vaulted cellar where a Japanese-inspired dining platform encourages guests to remove their shoes, instantly transporting them from the Latin Quarter to Japan. Nabeta's cuisine deploys traditional Japanese techniques — smoking, fermenting, drying, marinating — applied to premium French ingredients like mizuna, ponzu, sake, and soya. The result is polished, deeply personal cuisine that honors both culinary traditions without compromising either. Reservations are booked weeks in advance and are highly recommended.
