Restaurant AT, abbreviated from chef Atsushi Tanaka's initials, has been one of Paris's most singular dining destinations since its opening around 2012. Tanaka, born in Hyogo Prefecture, Japan, trained under Pierre Gagnaire before spending formative periods in Spain (Quique Dacosta) and the Nordic countries, absorbing molecular, Scandinavian, and French classical techniques that he weaves into a cuisine he himself calls 'impossible to categorize.' His single seasonal tasting menu changes continuously in response to nature and market availability, operating on a philosophy of 'permanence and mutability' akin to haiku poetry. The restaurant's recently renovated interior features Danish-inspired wooden furniture by Norwegian duo Sarg&Bein and bespoke ceramics by international artists. A Michelin star confirms the cooking's exceptional quality, and the restaurant also runs a wine bar in its vaulted cellar below.
