About
Komatsubaki is one of Paris's most refined Japanese counters, helmed by Yoichi Kino — formerly chef at Comme des Poissons and a Paris veteran of over 30 years — alongside sous-chef Ryuma Takubo, who previously earned a Michelin star at Yuzu An in Fukuoka. The restaurant, whose name references a traditional Japanese flower, occupies a space designed by architect Ryuichi Nakamura: a 12-seat hinoki (cypress) wood counter and a separate private lounge with tatami mats. The omakase unfolds across ten or more courses showcasing kaiseki principles — seasonal harmony, textural contrast, pristine fish — from bass tartare with gold leaf to a parade of precise nigiri (bluefin, scallop-yuzu, aburi salmon, grilled eel). Reservations can be made at the counter, a 4-seat table, or the tatami private room. The tasting menu is priced from €130.
