About
Opened in March 2024 within the Cheval Blanc Paris hotel on the banks of the Seine, Hakuba earned its second Michelin star at the 2026 Guide France & Monaco ceremony — one of the most celebrated promotions of the year. The restaurant is the creative summit of Hokkaido-born sushi master Takuya Watanabe, previously the chef behind the one-starred Jin, working in rare three-way collaboration with Arnaud Donckele (three-Michelin-starred culinary director of Cheval Blanc) and pastry chef Maxime Frédéric. The kaiseki-sushi counter seats diners in front of three parallel cooking stations; the progression moves from pristine raw preparations and dashi broths to cascades of nigiri with sea bream, abalone, bluefin tuna, and squid, finished with mochi and Frédéric's Japanese-inspired desserts. The space — designed by architect Peter Marino — evokes a Japanese forest, with dark black walnut walls, a Tsukubai stone fountain from Japan, and tableware handcrafted by Kyoto artisans.
