Haikara, whose name evokes a Japanese term for stylish Western influence, began as a food truck concept (Munchies) by chef Sho Miyashita before evolving into a permanent izakaya in the 11th arrondissement. Now located on boulevard Voltaire, the restaurant channels the vibrant, democratic energy of Tokyo's izakaya culture — share plates, sake lists, loud music, and deeply flavoured small dishes — while infusing it with Miyashita's Parisian training and sensibility. The deep-fried format (karaage, kushikatsu-inspired bites) features prominently alongside seasonal plates. Miyashita's Instagram documents an internationally recognised, collaboration-heavy creative vision; he has participated in pop-ups in New York and worldwide. Haikara and its sibling 'Haikara Deep Fried' are becoming fixtures of the Paris Japanese dining scene.
