Baillotte opened in 2023 as the second address from the owners of Narro, and the name — a traditional wooden harvest basket — captures the restaurant's commitment to seasonal French produce channeled through a Japanese sensibility. Chef Satoshi Amitsu, born in Ibaraki, Japan, trained as sous-chef at Michelin-starred French tables including Auberge des Templiers (1★) and the legendary Georges Blanc (3★). His cooking is firmly French in style — beautifully composed plates of wild fish, quality meat, and market vegetables — but infused with Japanese craftsmanship: precise knife work, umami-rich condiments like shiso and miso vinaigrettes, and binchotan grilling.
