About
Opened in Dubai's DIFC in 2008, Zuma quickly became the city's defining high-end Japanese restaurant and one of the most celebrated dining destinations in the Middle East. Inspired by the informal Japanese izakaya tradition, Zuma's menu spans three kitchens: a robata grill where premium meats and seafood are cooked over open charcoal, a sushi counter staffed by dedicated Japanese sushi chefs with a global sushi chef overseeing all 26 worldwide locations, and a main kitchen producing signature dishes including the celebrated miso-marinated black cod and wagyu beef. The DIFC location was ranked No. 2 in MENA's 50 Best Restaurants in 2022 and appears in every edition of the Michelin Guide Dubai since its 2022 launch. The bar has been cited in The World's 50 Best Bars (No. 38 in 2022), cementing Zuma's status as much more than a restaurant. While founded by German chef Rainer Becker and British-Indian entrepreneur Arjun Waney, the culinary direction is rigorously Japanese — Tsukiji-sourced ingredients, a global sushi specialist, and technique benchmarked against Japan's finest izakaya.
