Opened in August 2025 at 1533 N Wells Street in Old Town — the historic home of Kamehachi — SHŌ is the debut joint venture of Chef Mari Katsumura and co-founder Adam Sindler, both Japanese Americans raised in Chicago. Katsumura honed her craft at Michelin-starred Yugen in the West Loop before channeling her Japanese culinary heritage into a 10-course program ($155 per person) served at a 12-seat sushi counter and intimate table seating. The menu, arranged in seasonal 'albums,' ranges from composed cold dishes and warm plates to hand rolls and nigiri, blurring the line between izakaya and kaiseki. Chicago Magazine named it one of the city's 13 Best New Restaurants of 2026, and the concept has been praised for injecting fresh creative energy into Chicago's crowded omakase scene.
