Owner Satoko Takeyama reopened the 819 W Fulton Market space — formerly Ramen Takeya — under the Ramen Wasabi banner in late November 2024, bringing the group's signature rich tonkotsu and beloved chicken paitan to the heart of the West Loop dining corridor. The menu features classic pork buns, karaage, and a rotating selection of otsumami small plates alongside the core ramen lineup. The bar pours craft Japanese beers and sake, echoing the izakaya spirit of the brand. With Takeyama's decade-plus track record of running Chicago's most authentic Japanese ramen houses, this Fulton Market spot quickly cemented itself as a neighborhood destination.
