Following the success of its Mitsuwa Marketplace food-court stall in Arlington Heights, the Hokkaido-founded Santouka chain opened a dedicated standalone restaurant at 160 N Halsted in Chicago's West Loop in February 2026. The 43-seat space is the brand's 18th US location and brings full sit-down dining—plus dine-in, takeout and delivery—to one of Chicago's most vibrant restaurant neighbourhoods. The menu replicates the original Asahikawa recipes: slow-simmered pork-bone shio, shoyu and spicy miso broths with customisable toppings including toro (pork cheek) chashu, seasoned eggs and noodles cooked to order. Starters include gyoza, takoyaki and chicken karaage, making it a well-rounded Japanese ramen-ya experience in the heart of the city.
