Robatayaki traces its origins to the fishing villages of Sendai on Japan's northeast coast, where fishermen gathered around a central hearth to grill the day's catch. Takumi (炉匠) has been the standard-bearer for this tradition in Shanghai since its 2011 opening at IFC Mall in Lujiazui, making it one of the city's longest-running authentic Japanese dining concepts. Only premium binchō-tan charcoal is used, producing the clean, high-temperature heat essential to the style, and no artificial seasonings are permitted — only natural sea salt during cooking. Guests seated at the robata counter select raw seafood and vegetables from a display, watch the chefs grill them, and receive each item delivered on the traditional long wooden paddle.
