The owner sources fresh eel daily—never frozen—and employs the traditional Japanese double-grill method: eel is grilled over charcoal, steamed to release excess fat, then glazed with a house-made sweet-savory tare of dark soy, mirin, and sugar before a final searing grill. Because only 80 portions are prepared each day, the restaurant routinely sells out before the dinner service ends. The set comes with pickled radish, miso soup, and the option to add eel-bone dashi soy sauce for extra depth—a simple but supremely focused Japanese dining experience.
