Shabuway opened its first location on E 3rd Ave in San Mateo in August 2004, founded by Japanese restaurateurs Eiichi Mochizuki and Koji Kikura with a mission to bring authentic, affordable shabu-shabu to the Bay Area. The concept is simple: choose a broth, a premium meat entree, and a vegetable plate, then cook everything yourself at your table. The broths are intentionally delicate to let the natural flavor of the meat shine, while house-made dipping sauces add depth. The ritual concludes with noodles simmered in the now-enriched broth — the Japanese 'shime' closing course. Shabuway has since expanded to a second Bay Area location in San Jose.
