About
Shabuway opened its first location on E 3rd Ave in San Mateo in August 2004, founded by Japanese restaurateurs Eiichi Mochizuki and Koji Kikura with a mission to bring authentic, affordable shabu-shabu to the Bay Area. The concept is simple: choose a broth, a premium meat entree, and a vegetable plate, then cook everything yourself at your table. The broths are intentionally delicate to let the natural flavor of the meat shine, while house-made dipping sauces add depth. The ritual concludes with noodles simmered in the now-enriched broth — the Japanese 'shime' closing course. Shabuway has since expanded to a second Bay Area location in San Jose.
Why it's on Washoku Guide
  • The cook-it-yourself hot-pot format is a direct transplant of authentic Japanese shabu-shabu dining culture, unchanged since 2004.
  • House-made ponzu and sesame dipping sauces are prepared from scratch to complement the carefully selected premium meats.
  • The 'shime' noodle closing course — simmered in your richened broth — is a hallmark of genuine Japanese hot-pot tradition.
  • Affordable pricing makes this a rare opportunity to enjoy authentic shabu-shabu daily without the high cost of omakase.

No reservations typically required. The lunch and dinner split hours (11am–3pm, 5pm–10pm Mon–Sat) mean the best time to avoid a wait is right at opening. — Format: Hot-pot table service. Authenticity: Co-founded in 2004 by Japanese restaurateurs Eiichi Mochizuki and Koji Kikura, who brought authentic Japanese shabu-shabu traditions from Japan to the Bay Area.
