About
Totto, whose name captures both spontaneity and precision, is the joint creation of two Japanese itamae (sushi chefs), Terutaka Izumi and Nanyo Kurihashi, who trained extensively in Japan and France — including at the acclaimed Issé Workshop. Izumi specialises in sourcing superior fish from France and Japan and crafting hand-formed nigiri with meticulous adherence to Japanese tradition. Kurihashi focuses on natural wine and sake pairings, building an unusually thoughtful pairing programme that highlights harmony between sushi flavours and local French producers. Beyond the sushi and sashimi, a selection of izakaya small plates — inspired by the informal sharing tradition of Japan's pub culture — adds conviviality to the experience.
