About
Takuto (formerly Kaïto) is the brainchild of Takuya Watanabe — the first Japanese chef to earn a Michelin star in Paris with restaurant Jin, and now holding a second star at Hakuba in Cheval Blanc — working alongside serial restaurateur David Memmi. Located at 71 rue de Seine, the counter-style address recreates the convivial atmosphere of Tokyo's Tsukiji fish market: guests eat standing or perched at the marble bar while watching hand rolls assembled in real time. Fish is sourced at the highest level — killed ikejime-style and dry-aged — then wrapped in crackly nori with perfectly calibrated sushi rice. Rolls range from simple salmon to signature toro-akami combinations layered with marinated squash, shiso, and sesame seeds. The concept also offers delivery across Paris and the inner suburbs. A lunch menu of 3–5 rolls with miso soup starts at €24.
