About
Chef Niimori Nobuya was born in Tokyo's Yushima district in 1973 and came to Italy over twenty years ago, drawn by Italian cuisine's reverence for raw materials. He spent years in Michelin-starred Italian kitchens before working directly with Nobu Matsuhisa, then led the celebrated Sushi B in Milan's Brera district until 2018. His eponymous restaurant opened in 2024 inside a historic sixteenth-century palazzo near Cadorna, its interiors shaped by hexagonal motifs paying homage to Yushima and hemp-leaf carvings symbolising growth. The eight-course omakase degustazione (€130) and its vegetarian counterpart (€110) are the core offering, built on dry-aged fish, ultra-fresh seafood, and seasonal Italian ingredients. A crudo menu, rolls, and grilled dishes round out a broader à la carte. The restaurant earned Michelin 'Good Cooking' and Gambero Rosso Tre Bacchette 2025 recognition. Front-of-house is managed by Emanuele Palladino with precise, warm service.
