The Milan outpost of the respected Tokyo yakiniku brand places a charcoal grill at the centre of each table and entrusts the guest with the cooking — guided by staff who time the ideal three seconds for each cut. Chef Tsuyoshi Noikura, a recognised Wagyu specialist, selects the Kuroge cattle with the same rigour applied at the Tokyo flagship. The meal follows a structured arc: mixed starters, premium Wagyu slices showcasing each grade's marbling, and a shime closing of rice with semi-freddo Wagyu and pickled ginger. An extensive à la carte also includes fresh tofu with spicy Wagyu ragù, udon in Wagyu curry broth, and Sukiyaki.
