The purest kaiseki proposition in Milan outside of the IYO group, Hazama is the solo project of Satoshi Hazama — who began training in kaiseki in Japan at age 16 and opened in Navigli in 2020. His seven-course kaiseki (€130) and four-course tasting menu (€80) apply Japan's five fundamental cooking techniques to strictly seasonal Italian and Japanese ingredients.

Chef Satoshi Hazama was born in Gunma in 1984 and entered the kaiseki tradition as a teenager under a master who passed on both technique and philosophy. After working at restaurants in Japan and then at Al Pont de Ferr and Sol Levante in Milan, he opened Hazama in May 2020 on Via Savona in the Navigli/Tortona district. The kaiseki philosophy he practices is rooted in seasonality, colour, texture contrast, and a deep respect for the whole table as a temporal narrative — dishes are sequenced to create a crescendo of intensity, moving from delicate raw preparations through soups and grilled courses to a closing rice dish. The seven-course kaiseki (€130) changes with the seasons, requiring 24 hours' advance booking; a four-course tasting menu (€80) and an à la carte are also available. Michelin lists the restaurant under 'Good Cooking.' Hazama himself frequently steps from the kitchen to present courses at the table and to talk with guests about the philosophy behind each dish.
