Opened in 2020 under the IYO group's umbrella, IYO Kaiseki earned its Michelin star and Gambero Rosso Tre Bacchette 2025 recognition for the precision and cultural fidelity of its kaiseki-format cooking. The minimalist dining room, flooded with natural light from floor-to-ceiling windows overlooking Porta Nuova's skyline, sets a contemplative stage for a cuisine built on five traditional Japanese techniques — raw, grilled, fried, boiled, and steamed. Chef Soga's seasonal menus move through sashimi and nigiri before transitioning to cooked preparations like Iberian pork in negimiso sauce served on a hoba magnolia leaf. À la carte is available daily at lunch alongside the full kaiseki and kaiseki-sushi tasting menus; the adjacent IYO Omakase counter operates as an entirely independent seven-seat experience. Reservations are essential; dress code is smart elegant.
