About
Kappou — meaning 'cut and cook' — occupies the space between kaiseki high formality and izakaya ease, and chef Yoshikazu Ninomiya inhabits that space with total authority. His previous restaurant Fukurou built a loyal following; Kappou Ninomiya distills that experience into a focused counter where a dozen guests watch each preparation unfold. The lunch menu features sashimi, teishoku sets, and the Jubako Kaisen — a lacquered box of mixed sashimi and salmon roe over sushi rice — while dinner extends to dashimaki tamago, marinated octopus with wasabi, and a selection of premium nigiri and sashimi. Reviewers uniformly praise the toro, horse sashimi, and a tantan ramen described as superior to versions tasted in Japan.
Why it's on Washoku Guide
- One of Milan's truest Japanese chef's counter experiences: watch Yoshikazu Ninomiya work at close range in a room that feels transplanted from Ginza.
- Counter seating is the headline — book specifically to sit opposite the chef for the full multi-course kappou journey.
- The toro nigiri and tantanmen ramen are regularly cited as the best of their kind in the city by returning regulars.
Request counter seating when booking — table seating offers the same menu but misses the theatrical proximity to the chef. Tasting menus from approx. €60 per person at lunch.
