About
Sharing an entrance with IYO Kaiseki at the foot of Torre Solaria, IYO Omakase operates as a fully independent experience: seven seats, two sittings per evening, and a completely improvised menu built on whatever premium fish and seasonal produce the chefs source that day. The format is rooted in Edo-period edomae sushi tradition — nigiri prepared to order in front of guests, supplemented by small composed courses that move through cooked fish, soups, and aged proteins. Culinary Director Takeshi Iwai, who has lived and cooked in Italy for over 14 years, bridges Japanese precision with a deep familiarity with Italian ingredients. The result earned Gambero Rosso Tre Bacchette recognition in 2025. Advance booking is essential; both evening sittings fill weeks ahead.
Why it's on Washoku Guide
- Gambero Rosso Tre Bacchette 2025 and strictly limited to seven diners per sitting — one of the most exclusive Japanese dining experiences in Italy.
- The menu changes every single day based on the best available fish, making each visit a genuinely unique encounter with seasonal Japanese cuisine.
- Watching Iwai and his team prepare edomae nigiri and composed courses from arm's length at the hinoki wood counter is a rare theatrical pleasure.
First sitting 19:00–21:00, second sitting 21:30–23:30. Both sittings start simultaneously for all guests — no individual arrival times. Book via the IYO Omakase website. Located in a separate room from IYO Kaiseki; accessible from Piazza Alvar Aalto or Viale della Liberazione stairway.
