Founded in November 2018 by Japanese chef-owner George Itoh, who managed an Ippudo ramen outpost in New York City before relocating to Dallas, Ichigoh Ramen Lounge became one of D Magazine's top six ramen restaurants in Dallas — all six noted as founded by Japanese chefs. Itoh passed away in May 2021, and his wife Mie and daughters have since carried on his legacy with the same dedication to craft. The menu features delicate, carefully made ramen broths — notably chicken-based paitan — alongside Japanese-inspired appetizers, craft cocktails, and a romantically dim, intimate atmosphere in the heart of Deep Ellum. It remains one of Dallas's most distinctive Japanese-founded dining experiences.
