About
Tsujita LA Artisan Noodle opened in 2011 and quickly became the dominant force on Sawtelle Boulevard, with Oishii Desu reporting that 'Sawtelle just might have to be renamed Little Tsujita Town.' Owner-chef Takehiro Tsujita developed the tsukemen (dipping ramen) recipe with his Tokyo team — a combined tonkotsu and gyokai (fish dashi) concentrate that diners dip thick, chewy noodles into. The restaurant is the anchoring institution of the Sawtelle ramen scene.
