Tonchin was founded in Tokyo in 1992 by Katsuhiro Sugeno; the LA location on Melrose Avenue opened in 2023 and is run by son Anan Sugeno, who spent seven years preparing for the US expansion. The New York location previously received Michelin recognition. Everything — noodles, gyoza, broth — is made fresh daily in-house.
