About
Sushi Wasabi was founded by Katsu Aoyagi, who alongside Shige Shibutani of Sushi Shibucho was considered one of the two great Japanese sushi masters who established the OC sushi tradition. When Aoyagi retired in 2014, the restaurant was sold with the pure-omakase concept preserved: no fixed menu, handrolls only, counter seating, and daily-sourced fish. Monster Munching (2008) called it 'the best traditional sushi in OC.'
