About
Toshiharu Minami began his culinary career in Japan in 2000 before relocating to Germany in 2005 to train in prestigious European kitchens. When he opened Zipang in 2010, he brought both worlds together in a concept he describes as Nouvelle Cuisine Japonaise: a rigorous Japanese approach to ingredient quality and technique, applied to the seasonal produce of Northern Europe. Six-course (€96) and eight-course (€108) tasting menus showcase combinations such as chanterelle, squid and venison in panko crust — dishes that are simultaneously accessible and deeply considered. Der Feinschmecker lists Minami among the best Japanese chefs in Germany. The dining room is spare and calm, the service attentive and personal, and the cooking consistently ambitious without theatrics.
